Date muffins for a sweet treat without the sugarYou may remember me mentioning that Little Miss Green was on a sugar free diet. But sometimes a gal wants her sweet treats. Last week I experimented with using dates to make muffins, and although pretty heavy and stodgy, they got the thumbs up from LMG - and that’s all that matters!

Here is the recipe I finally settled on:

ingredients

8 oz. dates, chopped into small pieces
1 cup raisins
juice of half a fresh lemon
Rind of 1 lemon, grated
1 1/2 cups boiling water
1 cup wholemeal flour
1 cup white flour
1 tsp bicarbonate of soda (baking soda)
1 tsp baking powder
pinch salt
2 beaten eggs
vanilla essence to taste

Method

Put the dates, raisins, lemon rind and juice in a bowl.
Pour over the boiling water and leave until cool.
Preheat the oven to 180 degrees.
Mix together all the other ingredients, add them to the cooled fruit and briefly mix. No need to be perfectionist for muffins!
Spoon into muffin tins and bake for around 15 minutes until starting to brown.

As I said, these are pretty sticky and dense, but they certainly fill a hungry tummy with sweet goodness.
