3 ways with cheese
If you’re getting fed up of cheddar, why not take inspiration from the Mediterranean and Middle East to experiment with some traditional soft cheeses?
Halloumi, Feta and Mozzarella are increasingly easy to find at farmers markets and on deli counters, so why not ring the changes and try them for a taste explosion!
Halloumi
Traditionally made from a mixture of cows, sheep and goats milk, Halloumi is popular throughout the Mediterranean. .
Halloumi is ideal for frying, grilling or cooking on the barbecue where it will get a crisp outer and a soft and creamy inner.
You can serve fried Halloumi with salad as a starter or bake it in the oven with vegetables.
Feta
Feta is one of my favourites – a good feta is crumbly, rich and very tangy – a little goes a long way!
This it the vital ingredient of a Greek salad and cooks beautifully.
If you stir fry some vegetables, crumble in some feta at the end, let it melt and you’ll have a delicious and fuss-free ‘sauce’ that doesn’t go stringy.
Mozzarella
For perfect pizzas, Mozzarella is the number one choice.
It’s soft and velvety and has just the right amount of stringiness.
If pizza isn’t your thing, you can slice mozzarella with tomato and basil then dress with olive oil, balsamic vinegar and black pepper for an Italian-style salad.
