Favourite chickpea recipes

oven-roasted-spicy-chickpeasThe other day a friend bought her first two tins of chickpeas and wondered what to do with them.

Chickpeas are a staple food at Chez Green so I thought I’d share some of my favourite ways to eat them!

Quick and easy ‘risotto’

My cheats recipe is simple and convenient ‘fast food’.

Fry and onion and garlic, add some rice, cover with water and simmer until the rice is cooked.

Add whatever veggies and herbs you like such as peppers and sweetcorn along with a tin of chickpeas for a satisfying, filling meal.

Hummous

One of Mr Green’s favourites is hummous.

You’ll be spoiled for choice if you look for recipes on the internet, but one of our favourites includes roasted red peppers for a decadent daily treat.

Curry

One of my favorite ways of eating chickpeas is in a curry.

Fry an onions, garlic, ginger and curry spices.

Add some diced potatoes, a tin of tomatoes and tin of chickpeas for a speedy curry.

‘Scotch’ eggs

I used to love scotch eggs, but they are no good for vegetarians.

I’ve not tried this, and I admit it looks very fiddly, but here’s an interesting and delicious version of vegetarian scotch eggs.

Falafel

Falafel are delicious, nutritious snacks. I like mine with a sweet apricot dipping sauce (it takes all sorts right!)

My favourite recipe can be found at baking elements where the author shares both an oven baked and fried version.

chickpea and sweet potato stew

Served with couscous, millet or quinoa, it’s simple to make a delicious Moroccon stew:

Fry onions, garlic and some spices – paprika, cumin and cinnamon work well.

Add a tin of tomatoes, tin of chickpeas and a couple of diced sweet potatoes.

Simmer until cooked then add some spinach until wilted before serving.

Roasted chick peas

These are a fantastic snack you can take on the go.

Healthier than crisps (and I reckon tastier too) you can’t go wrong with these roasted chickpeas – especially as they are my own recipe!

Chocolate chip cookies

Yes, you read that right – here is a sweet recipe for chocolate chip chickpea cookies!

A combination of flour, oats and chickpeas with chocolate chips makes an interesting snack with a cup of tea

    Thanks Mrs G, I will try the recipes we ave chickpea and onion curry very regularly , very tasty even for a meat eating other half

    I really love chickpea and potato curry. Simple and very satisfying!
